    Watermelon Salsa with Tomatillo and Chips

    Summer brings watermelon! Especially in NY this year, where the climate has been perfect for growing watermelon. I have been getting both red and yellow watermelon from the local farm but these sunshine bright yellow watermelons are the best. I decided to make a delicious gazpacho with the red watermelon and save the yellow watermelon for this refreshing Yellow Watermelon Salsa with Tomatillos. Tomatillos look like green tomatoes but they have a very tart flavor. The tart flavor mixed with the “sweet heat” ingredients in the salsa, make the perfect combo for this recipe! Yellow Watermelon Salsa with Tomatillos is best served with chips as a delicious and healthy snack/appetizer.

    What are tomatillos?

    Tomatillos are a Mexican husk tomato and are a staple of Mexican cuisine. They are very similar in looks to a green tomato but are very different in flavor. They have a tart, slightly herbal flavor and are commonly used in salsa verde (green salsa) recipes. I like eating tomatillos raw but cooking them helps to bring out more flavor and soften the thick skin.

    When you prepare tomatillos, beware of the sticky residue when you remove the papery husk around the tomato. Then cut as you would a regular tomato.

    Making Yellow Watermelon Salsa with Tomatillo is super easy and just requires a little bit of prep work. But as always, being organized with your ingredients is always recommended. Simply slice the watermelon, chop & dice the rest of the ingredients and mix them all in a bowl and your watermelon salsa is ready to enjoy!

    How do I remove seeds from watermelon?

    Wouldn’t it be great if all watermelons were seedless! Well, most watermelons are missing those annoying black seeds now because of cross breeding. And no, seedless watermelons are not genetically modified! Seedless watermelons just have 33 chromosomes, and the tiny white seed husks don’t mature into fertile seeds. Also, because seedless watermelons contain more genes they are actually sweeter than seeded watermelons! One more thing – if you do happen to eat a few of the seeds, no worries. They are safe and healthy to eat!

    When I prepped my yellow watermelon, there were very few black seed, therefore it was easy to just pick them out. But if you need a tip on removing the black seeds, check out this link.

    Description

    Yellow Watermelon Salsa with Tomatillo is a refreshing summer salsa to enjoy with chips as a snack or appetizer!


    Ingredients

    Scale

    2 cups seedless watermelon (yellow or red), cubed

    ¼ cup tomatillo

    ½ red pepper, diced

    ⅓ cup red onion, minced

    1 handful cilantro, chopped

    1 handful mint, chopped

    ½ lime, juiced

    1 tablespoon honey or agave

    2 teaspoons sea salt

    ¼ teaspoon black pepper

    ½ jalapeño pepper, diced

    ½ serrano pepper, diced


    Instructions

    1. Prep all ingredients – watermelon, tomatillo, red pepper, red onion, cilantro, mint, lime, jalapeño pepper, serrano pepper. Measure out honey, salt and pepper.
    2. Place all ingredients in a bowl and stir together. 
    3. Serve with tortilla chips.

    Notes

    Optional: More or less of the hot peppers. If peppers are left seeded, they will give more heat!
