    Tofu Scramble with Swiss Chard & Pickled Red Onions

    Tofu Scramble with Swiss Chard and topped with Pickled Onions on a decorative plate

    Tofu Scramble with Swiss Chard is one of my healthy, quick go-to breakfast recipes! Although eggs have always been a big breakfast item in my house, tofu scramble is a great Vegan alternative to scrambled eggs. Basically, whatever ingredients you would put in your scrambled eggs, you can do the same with scrambled tofu! And, the addition of turmeric gives it the yellow color similar to eggs, and also serves as an immune booster! Super Healthy!!

    I am all about stocking my refrigerator/pantry with healthy ingredients while only doing a “once-a-week” market run. I cook with my most perishable ingredients in the beginning of the week. The latter part of the week is for the longer lasting vegetables and ingredients. Tofu and tempeh are especially great for my “end of the week” recipes. As well as vegetables such as kale, zucchini, cauliflower, potatoes and carrots, just to name a few. That is how I have always done my food shopping but it is even more useful with the stay-at-home restrictions because of the coronavirus pandemic. Follow just a few of my tips (*to be posted soon) and you won’t need to continually run back to the market!

    You can use a variety of greens for this sauté. I just happen to love the taste and look of Swiss Chard and its stems – try the rainbow chard for a variety of color!

    To make tofu scramble is super easy! Start with extra virgin olive oil in a pan, cook your onions for 5 minutes, then add garlic, Swiss Chard and scallions. Cook for another 5 minutes. Then add your mashed tofu, turmeric and spices. Heat through and you are ready to eat!

    • A plate of food - half bread with mashed avocado and half with scrambled tofu with greens
    Tastes great with a slice of avocado toast – mash avocado and mix in some cilantro & salt . Top it with red pepper flakes for a little heat!

    Or top it with a Pickled Red Onion for some extra zing!

    Description

    Tofu Scramble with Swiss Chard & Picked Red Onions is a great VEGAN breakfast alternative to scrambled eggs. Add in some immune boosting turmeric for great flavor and bright yellow color also!


    Ingredients

    Scale

    1 tablespoon extra virgin olive oil

    ½ onion

    1 garlic clove

    6–8 Swiss chard leaves, chopped 

    ½ block tofu, pressed and mashed *

    1 teaspoon turmeric

    salt & pepper to taste

    pickled red onions (optional)


    Instructions

    1. Heat olive oil in a non-stick sauté pan. Add onion and cook until translucent – about 5 minutes.
    2. Add garlic, Swiss chard and cook until chard has wilted, approximately 5 minutes.
    3. Add tofu, turmeric, salt & pepper and heat through thoroughly.
    4. Plate and serve topped with pickled red onions and/or avocado toast. Delish!

    Notes

    *I recommended pressing tofu before using it in a sauté – it takes the moisture out of the tofu and makes it crumble better. You can use a potato masher to mash the tofu or just simply a fork.

    Hint: Press the tofu while you are prepping & cooking the other ingredients!

      Easy breezy “cover girl” recipe!!!

      I added Goya Adobo Seasoning….and served it over porcini mushroom polenta

      And some vegan Beyond Breakfast sausage on side and guacamole/ avocado with diced red onions ….

      I didn’t add the pickle red onion, but there is always next time…
