Sunday morning breakfast was always a big deal in our house while raising our 3 kids … oh wait it still is!!! They still come home over the weekend and wake up early (i.e. after 10 a.m.) to have what we traditionally call “special breakfast“. It will usually consist of either pancakes, french toast, waffles or crepes and some type of egg mixture – scrambled, fried, poached, frittata or omelette. And for the sides we will have home fries, roasted tomatoes & veggies and fresh fruit. And of course, we can’t forget fresh bread, croissants, muffins and bagels. Now that’s a family tradition!!
Might I say – Bloody Mary’s are no stranger to our table either!
What makes it even more fun is, all of us end up taking on a “task” to execute this “special breakfast“. It can be cracking and scrambling the eggs, chopping the veggies or if you’ve had a late Saturday night, you are usually setting the table or toasting the bread 🥯!
I know it seems like a bit of an indulgence, but it is a tradition that I hope carries on for many years to come!

Now one of their favorites – Brioche French Toast !
What is Brioche Bread?
Brioche is a yeast bread of French origin that has a high egg and butter content. It is known for it’s golden color, paper-thin crust and an almost flaky texture.
The key ingredient in this dish is the bread, so pick a loaf of high quality brioche bread. Slice it yourself at home, that way you can control the thickness of the slices (approximately 1/2 inch or more recommended).
Using tongs, dip each slice individually in the egg mixture and place on heated & greased griddle. Cook until golden brown and keep warm until batch is done for plating.
While you are preparing the french toast on the griddle, slice up the bananas and cook them in a separate non-stick pan so they are ready around the same time as the french toast.
Brioche French Toast with Berries
Another twist on the french toast is to sprinkle it with cinnamon and powdered sugar. You can plate it surrounded by your favorite berries!
Brioche French Toast covered with Caramelized Bananas
1 loaf Brioche Bread
1 tsp vanilla
4 tbsp butter
3 tbsp maple syrup
1 tsp cinnamon
1/4 tsp sea salt
- Cut bread into thick slices – approximately 1/2″ each.
- Crack eggs individually into a large bowl. Add vanilla and whisk until fully blended.
- Cut 1/2 ” slices of bananas and set aside.
- Heat a cast iron griddle and grease with 1/2 tbsp of butter.
- Carefully dip both sides of bread into egg mixture using tongs so the bread doesn’t break apart. Place on heated griddle.
- When golden brown, flip with a spatula and cook the other side. Remove when both sides are golden brow. Keep warm in a covered dish or on warm setting in the oven, uncovered.
- Put another slab of butter on the griddle and continue cooking until all pieces are done. Meanwhile start preparing the bananas.
- In a non stick pan over a low flame, add 2 tbsp of butter. When melted, add the bananas and gently flip & move slices around with a spatula to assure both sides are browned. Add in syrup and sprinkle with cinnamon & sea salt.
- Plate slices of french toast covered with caramelized bananas and serve immediately. Enjoy!
